Why your kitchen floor is still slippery after mopping

If your kitchen floor is slippery again shortly after mopping, you're not mopping badly. You're using a product that spreads the grease around instead of removing it.
Where that film comes from
In a commercial kitchen, grease doesn't stay in the fryer. It evaporates, travels through the air with the steam, and settles on everything: extraction hoods, tiles, and above all the floor.
There it cools and solidifies into an extremely thin layer. You can't see it. You feel it underfoot.
Why ordinary detergent doesn't remove it
A conventional detergent works through surfactants: they surround grease particles and hold them suspended in the water so they can be carried away.
The problem shows up at the rinse. If the mop water already carries grease in suspension — and in a kitchen it does from the first minute — that grease redeposits onto the floor as it dries. You've moved it, not removed it.
That's why the floor looks clean while it's wet and feels greasy again once dry. And it's why mopping daily with the same product makes the layer grow rather than disappear.
The safety problem nobody counts
A floor with a grease film is a slippery floor, and same-level falls are among the most common causes of workplace accidents in hospitality.
It's a risk that accumulates without warning: the floor doesn't go from safe to dangerous in a day, but over months, while everyone gets used to it.
What enzymes do differently
An enzyme doesn't surround grease: it breaks it down. It splits the fat molecules into smaller, soluble fragments that leave with the water and don't redeposit as it dries.
The practical difference is cumulative. With conventional detergent, each mop leaves slightly more grease than the last. With enzymes, each mop leaves less.
There are two added benefits in a kitchen:
- The dirty water goes down the drain with active enzymes, which keep working inside the pipe and in the grease trap
- No chlorine and no fumes in a room where food is prepared, compatible with HACCP hygiene management
What to expect in the first few days
Worth knowing in advance: if you've been accumulating film for years, the first few mops may leave the floor stickier than usual. That's the old layer breaking down and coming to the surface.
It usually lasts a few days. After that the floor looks noticeably different: matte rather than shiny, and without that feeling underfoot.
When the problem isn't grease
If the floor is also slippery when dry and in areas with no kitchen traffic, the problem is probably the flooring itself — tiles too polished, or unsuitable for food-service use. No cleaning product fixes that; it needs an anti-slip treatment or a different floor.
